Tempura Batter Mix "AGEJOZU" is a revolutionary tempura batter mix that anyone can easily use to make crispy tempura that won't get soft even after letting it sit for a while.
The trick to frying tempura well is in the gluten. Gluten is an ingredient that makes four sticky. Repeated stirring and time make it extra sticky, and this causes tempura that isn't crisp or turns out oily.
Tempura Batter Mix "AGEJOZU" was devised using flour that is heat-treated and granulated to control gluten to an optimal state, so anyone can easily make great tempura.
(1) Add 1.6L of water per 1kg of tempura batter mix and mix until smooth.
*If making thick batter (such as for kakiage), add about 1.4L of water per 1kg of tempura batter mix.
(2) Heat oil until about 180°C, or where a drop of batter will sink partway, rise quickly to the surface, and then expand.
*Fry large ingredients at a slightly lower temperature.
(3) When removing tempura from the pot, shake two or three times to remove excess oil.
After opening the package, please seal any leftover flour to protect it from infestation, etc., and use the remainder as soon as possible.
